Patrode
Patrode is a traditional South Indian delicacy, especially popular in Karnataka, Kerala, and coastal regions. It is prepared using colocasia leaves (elephant ear leaves) that are smeared with a spicy rice and lentil paste made with red chilies, tamarind, jaggery, and aromatic spices. The leaves are stacked, rolled, steamed, and then sliced into bite-sized pieces, often tempered with mustard, curry leaves, and coconut. The dish strikes a beautiful balance between spice, tang, and a hint of sweetness, making it a festive and homely favorite.
